Rafael Pérez, a Peruvian chef who joined Zazu after a successful career in the United States, serves contemporary cuisine with Latin American influences, mainly based on local ingredients. Swordfish ceviche sits next to a Pangora crab and avocado salad seasoned with lemon foam, or an ossobucco with a twist – accompanied by truffle and spinach gnocchi.
