Inside the huge Walt Disney Concert Hall – a steel complex of venues at the heart of Los Angeles - the renowned German chef Joachim Splichal has created one of the city's most prized tables. An elegant restaurant with a pure and modern decor, Californian cuisine is infused with European influences. The trademark of Patina is fresh seasonal products highlighted by sophisticated presentations. The flavours are distinct in each dish, sweet or salty, but are always magnified out by herbs, exotic spices or bursts of acidity such as in the grilled Scottish salmon with baby artichokes and blood orange, or the Mediterranean loup de mer with minestrone and pesto croutons.
