“The main thing is to eat well. This makes it much easier to get work done”. This local proverb says a lot about the epicurism of the inhabitants of the Saarland who are known for their French lifestyle. Klaus Erfort has created a cuisine dedicated to the absolute authenticity of the products. “Who still knows today what a carrot should really taste like?” he sighs. “I remember the carrots from my grandfather’s garden which you bit into as soon as they came out of the earth. It’s difficult to find that today”. But Klaus knows how to surround himself with the best producers in order to recreate the “true” flavours, as testified to by his pigeon in salt dough accompanied by a pigeon liver sauce, onion cream and a baked apple or his fillet of venison with quinces and duck foie gras in hazelnut milk. The main thing is to eat well…
