His development kitchen is a building dating back 450 years with very minimalist décor, set in the English countryside just a few miles outside London. From a very young age, this “culinary alchemist” has had a modern approach to his cooking - the study of the physical phenomena that come into play during the preparation of a dish - and he likes nothing better than to endlessly explore new possibilities. One of his creations is a seafood plateau with a technological twist. The oysters, razor clams, prawns and abalowe are served with an IPod so that you can enjoy the flavours while listening to the sounds of the sea, the idea being to immerse you completely in the world of the ingredients on your plate!
