Grand Chef Joho embodies the American dream. Since coming to the United States more than 25 years ago, this Frenchman has become one of the most respected chefs on the continent. Everest, his restaurant, is on the 40th floor of the Chicago Stock Exchange, and has large bay windows with breathtaking views of the city below. Joho endlessly reinvents the great classics of French cuisine. He combines products like foie gras or caviar with the humble potato and turnip to create delicious surprises. In honour of Joho’s homeland, wines from Alsace star in many of his recipes, such as Maine scallops with Belgian chicory, Melfor and Gewurztraminer. The restaurant is also home to a remarkable collection of works by contemporary artists.
