Jean Joho embodies the American dream. After coming to the United States almost 25 years ago, this Frenchman from Alsace is now one of the most respected chefs on the continent. Like a symbol of his success and the giddy heights that his cuisine has reached, his stylishly decorated restaurant is called Everest and is found on the fortieth floor of the Chicago Stock Exchange. This modern restaurant offers breathtaking views of the city below and Jean Joho endlessly reinvents the great classics of French cuisine. His hallmark is to combine noble products like foie gras or caviar with the humble potato and turnip to create delicious surprises. In honour of his homeland, wines from Alsace also star in many of his recipes such as his Wasserstriwela smoked Arctic Char on a bed of paprika-infused sauerkraut or Casco Bay Sea Scallops with Belgian chicory, Melfor and Gewurztraminer.
