Local legend has it that the mere sight of the fjords - these narrow watery glacier valleys between stone, sea and mountains - can leave visitors in a sort of trance, as if they have just awakened from a dream. Engø Gård is situated on the island of Tjøme, typical of the wild untouched Nordic landscape. It is an old 19th century inn that has been converted into a charming cottage and various outbuildings, including a restored barn, with eccentric red and yellow façades. Whether grilled or made into delicious little tartlets, the scallops collected just offshore from the port of Trondheim, in the centre of Norway, take pride of place in the menus concocted by Morten Haakenstad since, for this talented young chef, they are quite simply “the best in the world”.
