Hélène, from the southwest of France, remains faithful to the simple and authentic flavours of products. The foie gras and poultry come from the Landes, the beef from Chalosse, the salmon from the Adour river and the milk-fed lamb from the Basque Country. Whilst upholding the values inherited from her childhood, she cleverly combines them with imagination and mischievousness, always listening to her emotions when cooking and displaying a real, particularly feminine, sensitivity.
