I love thyme, bay leaves, sage, rosemary, garlic, onions, tomatoes… everything that is close to the earth”. His “courgettes flowers stuffed with chicken and virgin olive oil” or his “rack of roast lamb in garden herbs” are delicious moments of pleasure and freshness.
