It was on the island of Fyn, considered as “the garden of Denmark”, that Hans Christian Andersen was born, and which has now been immortalised through his fairy tales. Today in Millinge, a small village on the island, there are other tales being told: that of a man who makes his recipes into true Scandinavian legends. At Per Hallundbaek table, the salmon is home-smoked, the North Sea Lobster comes with mango chutney, and the poached eggs are embellished with caviar. The rooms are small lofts, with their walls of white bricks, minimal decorations and soft lighting. On a former vineyard, the oldest building in Copenhagen, which was built more than a thousand years ago, lends its medieval charm to the Kong Hans Kælder restaurant. It is in a subterranean space full of mystery, with vaulted cellars in gothic style, that you will sample the delicacies of chef Thomas Rode Andersen. His food is fresh and simple, somewhere between French and Danish cuisine - lobster with ginger, garlic and soya, Oléron oysters with horseradish and cucumbers… And best of all is the fact that you can watch the chef and his team at work through a window of the dining room.
