Even if he can’t take the credit for Klein blue, this particular Mr. Klein could also copyright some of his creations… His name is Jean-Georges Klein and he is the chef of this family-run establishment where purity reigns both in the decor and on the plate. Formerly home to the king’s lieutenants, barracks for military governors and then the abode of a baron of the Empire… This abbey, tucked away at the foot of the Alsatian vineyards, has travelled through time collecting secrets along the way. In the 17th century, Colroy-la-Roche was German and was called Koenigsberg, which means “King’s mountain”. When it became French again, the village held onto its majestic character, amidst the undulating countryside which exudes the purest air in the world. Here Mireille and her son Nicolas have created an inviting hotel with the charm of a family home, plus a spa featuring body contouring with essential oils and of course great food...
