Restaurant of a Grand Chef Relais & Châteaux in town (Taichung) Le Moût, creation of Grand Chef Lanshu Chen, is a highlight of Taiwan’s gastronomic scene. Situated in the heart of bustling Taichung, the restaurant has garnered international critical praise since launching two years ago. The name Le Moût derives from the French word for the process of fermenting grape juice, a simple substance, into a fine and complex wine. Similarly, Chen takes simple ingredients and transforms them into sophisticated, unexpected dishes. Her philosophy is to combine a traditional French foundation with Asian flavours, expertly weaving between the two cultures. The interiors, meanwhile, echo the approach of its chef, pairing antique chandeliers, sleek modern mirrors and rich velvet upholstered dining seats.
