L’Oasis
Restaurant of a Grand Chef Relais & Châteaux in a village (La Napoule) In the shade on the patio, surrounded by palm trees and other exotic flowers, this lush green oasis of sensations is the setting for the renowned cuisine of the Raimbault brothers. Depending on what catches their eye at the Forville market in Cannes, Stéphane and Antoine put together a menu that is contemporary, Provencal and Asian: lime-infused soufflé of locally caught sea urchins, Soleil Levant of raw fish. But it is their brother François, the patissier in the family, who adds the finishing touches to this magical symphony with his renowned “Caravan of Desserts”. Even today “In the Streets of Antibes”, one of his greatest jazz tunes, continues to serenade the town and the region, which have become something of a “European New Orleans”. Here, the swing is not only about the jazz festival; there are also lots of great golf courses nearby. The Imperial Garoupe Hotel is located in this dreamlike setting. In this pink-walled villa, the rooms are all decorated in a nomadic spirit and the vibrant colours of the South are muted by the parasol pines that edge the patios. And the menu is also full of original melodies: crispy millefeuille of pan-fried foie gras and figs with cep mushrooms in olive oil, risotto of langoustines ribboned with locally-grown courgettes… A festival for the taste buds!

Hotel and restaurant in a park (Saint-Paul-de-Vence) In a two-hectare park with century-old olive trees on the doorstep of Saint-Paul-de-Vence, Le Mas de Pierre overlooks hills and valleys. Monte Carlo Beach
Hotel and restaurant on the seafront (Roquebrune-Cap-Martin) Chic and timeless, since it opened in the 1930s, the Monte Carlo Beach has perpetuated elegance and the art of receiving. Decked out in “Riviera red” the Hotel is a veritable ode to the Mediterranean reflected in its refurbished rooms and suites where the large portholes between the bedroom and bathroom are a source of light and depth. On the ground floor, the private staircases linking the loggias to the promenade give the rooms a feeling of bungalows on the waterfront. La Villa Spa
Hotel and restaurant on the seafront (Calvi) In Calvi, under the benevolent gaze of the statue of Notre Dame de la Serra, you will find La Villa. It is almost remniscent of a Corsican dream as it overlooks the citadel and one of the most beautiful bays in the world. Marion and Jean-Pierre Pinelli created this hotel over 15 years ago. The water of the infinity pool in the middle of the terrace seems to be purposefully seeking a way to join the Mediterranean. The understated and contemporary design of the rooms promises total relaxation. In the kitchen, Sébastien Sevellec takes Corsican and Mediterranean cuisine to new heights and reserves a starring role for fresh fish and shellfish. His dishes capture the essence of the “Island of Beauty”, such as his delicious and freshly caught dentex fish or rock fish served with girolle mushrooms, baby onions, new potatoes, basil and a drizzle of olive oil.
