Restaurant of a Grand Chef Relais & Châteaux and hotel on a river (Joigny) Pleasant rooms with large terraces and a gourmet restaurant right on the banks of the River Yonne, an array of available activities, a charming and innovative spa, an indoor swimming pool, a special programme for children… The Côte Saint-Jacques is a generous and captivating destination, just like its owner, Jean-Michel Lorain, the enthusiastic and exuberant chef who will welcome you like a friend and will perhaps let slip, while chatting to you, the secrets of his recipes. His genesis of a dish is in itself worth the trip… (Lys offer valid throughout the year except for weekends (“weekend is defined as the period from Friday evening to Sunday noon included))
L’Espérance
Restaurant of a Grand Chef Relais & Châteaux and hotel in the country (Saint-Père-sous-Vézelay) Throughout history Vézelay has charmed artists, poets and kings. It was from this medieval castle, now part of a UNESCO World Heritage Site, that the knights embarked on the second and third crusades... At L’Espérance, a former café and grocery store in the middle of the vineyards, Marc Meneau is leading another crusade: a taste mission. This self-taught chef discovered the art of cooking in books and then went on to develop his own sense of inventiveness. His oysters in a salty aspic, his shellfish and caviar tureen and his “Marie-Antoinette-Sofia Coppola” strawberry dessert all testify to this. The Chef’s other battle is to defend traditional winemaking techniques and to protect the local vines from the phylloxera pest that ravaged them in the past.
Le Relais Bernard Loiseau
Restaurant of a Grand Chef Relais & Châteaux and hotel in a village (Saulieu) The name Bernard Loiseau inevitably stirs up a rare sensorial journey and an authentic culinary experience. Chef Patrick Bertron has added his talent to the legacy left by his master based on simplicity, powerful tastes and new flavours… But the food isn’t the only attraction at this stunning Burgundy location: Dominique Loiseau has made it an exceptional hotel from every point of view. As well as its elegantly-decorated rooms and beautiful lounges, gardens and spa, the welcome is warm and attentive. This is a magical and timeless place where the idea of well-being takes on its full meaning. (Lys offer valid throughout the year except for weekends (“weekend is defined as the period from Friday evening to Sunday noon included))
Maison Lameloise
Restaurant of a Grand Chef Relais & Châteaux and hotel in a village (Chagny) From father to son, the Lameloise family has brought to life this former post house renowned for the quality of its hospitality and its unique cuisine. Jacques Lameloise has perpetuated the exacting culinary standards of his father Jean and his grand-father Pierre. Today Eric Pras seeks “to continue the success story of the property and uphold the current level of excellence.” He has created a fine balance between his cuisine and the Lameloise heritage with dishes like: fraîcheur of crab and blue lobster, gazpacho of green asparagus from the South, chaudfroid with a green apple jus, Brittany langoustines and French caviar, duck foie gras dressed with steamed potatoes and truffle-perfumed bouillon.
Georges Blanc Parc & Spa
Restaurant of a Grand Chef Relais & Châteaux and hotel in a village (Vonnas) Starting with the family inn created in 1872, Georges Blanc, renowned chef and visionary businessman, has developed a veritable Gourmet Village centred around the original house on the river bank and the rebuilt Ancienne Auberge 1900. Fine dining is, of course, at the heart of this village dedicated to conviviality. Together with his family, he constantly reinvents regional specialties through creations such as the crêpe Vonnassienne with salmon and caviar or the legendary Bresse chicken with foie gras. On an area of almost 5 hectares, discover a dream spa, a new acquqtic space next to a pond and a large, landscaped park illuminated during the night. A truly unique destination.
