Restaurant of a Grand Chef Relais & Châteaux in the woods (Bruxelles) On the edge of the beautiful Sonian forest, Grand Chef Pascal Devalkeneer achieves the perfect balance between traditional and avant-garde concepts. This talented chef’s cuisine is well-thought out and beautifully executed. Inspired by what’s in season, he produces artfully presented dishes that delight the senses. Succulent baby lamb from the Pyrenees roasted with garlic and rosemary is a perfectly paired with “di Firenze” aubergine and tamarind. Delectable Per Se caviar and broccoli flowers, Parmentier style, enhance the special Gillardeau oyster tartar. Sample these creations in the atmospheric restaurant with soft lighting and modern décor or on the leafy terrace with its borders of aromatic herbs, which is a wonderful place for “al fresco” dining.
