Yannick has been a chef for 18 years, and having worked in France and Vietnam, 12 years ago he based himself on Koh Samui.
He has been a chef and executive chef in 5-star resorts but also owned his own restaurant for seven years, which was well-known on the island for serving excellent French cuisine.
He specialises in French and Siamese cuisine with a modern twist.

Where do you find your inspiration when preparing a new recipe?
I am always being inspired by interesting scents and the flavours of food. Sometimes even one flavour can give me ideas for an entirely new dish. Then I get out my pencil and start drawing my creation before even stepping into the kitchen.
How would you define your cuisine in a few words?
Traditional, refined French cuisine.
