Supawat Suwannakosol - The RachamankhaChef Supawat Suwannakosol started work in the kitchens of Novotel Suriwongse 20 years ago. He worked his way up the ranks from dishwasher to executive chef in a wide variety of properties. Initially concentrating on Asian food, Chinese and Thai, he worked in the Chiang Mai Orchid, Amari Rincome, Doi Ankhang Resort and Lanna View, where he became chef for the first time.

He moved to Pattaya to further his experience and became European Chef for the Pattaya Centre and then moved to the Marriott Pattaya.

An international move was next, to Paradise Casino Myanmar as Executive Sous Chef. Finally returning to his home ground 4 years ago and taking up the position of Executive Chef at Rachamankha: where he designed a unique menu incorporating all of his wide culinary experience with dishes from Myanmar, Shan State, Thailand and Europe.

Two Questions to the Chef

Where do you find your inspiration when preparing a new recipe?

The ambience and character of both the restaurant and hotel inspire my recipes and menu design; I want dishes appropriate for the property and the environment in which they are served.

How would you define your cuisine in a few words?

Quality and freshness of ingredients; unique recipes and dishes not to be found elsewhere; trendsetting menu design.
