Pan Roasted Mekong Lobster with Tamarind Sauce

For 1 serving
Ingredients
250 grams Mekong lobsters (3)
1 tbsp palm sugar
1 tsp chopped garlic
1 tsp lobster brain
2 tbsp tamarind juice
2 tsp fish sauce
4 tbsp fish stock
1 tsp cornstarch
Cooking method
Clean the lobsters and peeled out the shell. Keep the tail and the head.
Heat the pan, add vegetable oil, cook the garlic and palm sugar until light brown then add fish sauce and Tamarind juice for 1 minute.
Roast lobsters in the oven for 5 minutes at 250C then add them to the previous preparation until the Lobsters get a nice brown colour, pour the fish stock and let it simmer for 8 minutes.
Transfer the lobster from the pan. Strain the sauce and add the lobster brain and cornstarch, reduce for 2 minutes.
Serve with pilaf rice.
