Braised Hawke’s Bay Belly Pork Tiger Prawns, Sauté Tatsoi with Ginger Chilli and Lime Dressing

Serves 4 people
Ingredients
4 pieces belly pork 4cmx4cm braised the day before and pressed
12 tiger prawns
4 cups of tatsoi (or baby bok choy)
1 knob of fresh ginger finely grated
Dash of peanut oil
4 teaspoons salmon caviar
3 shallots finely sliced and fried until golden brown
Selection of micro salad
12 tablespoons chilli and lime dressing
½ mango cut into 1cm dice
2 small vine tomatoes, deseeded and cut into 1cm dice
2 teaspoons toasted sesame seeds
½ tablespoon chopped coriander
½ lime juiced
Chilli and Lime Dressing
1 chilli diced finely
1 clove garlic minced
2 shallots finely diced
1 tablespoon coriander stem finely chopped
30g soy sauce
1 tablespoon fish sauce
40g peanut oil
40g non scented oil
15g sesame oil
10g balsamic vinegar
Zest and juice of lime
Pinch of salt and pepper
Mix all together and infuse for at least 1 hour
Method
Slowly caramelize the skin side of the belly pork and after 2 minutes add the seasoned tiger prawns and gently cook then deglaze with lime juice.
Flash fry the tatsoi with the peanut oil and ginger, arrange on plate with the proteins.
Mix the tomato, mango, sesame and coriander with the dressing and spoon around the plate.
Finish with salmon eggs, shallots and micro salad.
