Dale Gartland - The Farm at Cape Kidnappers
Dale arrived in New Zealand at Kauri Cliffs in 2003 to work for the summer.
Having worked in various Country House Hotels in the UK in 1999 he landed his dream job at the Relais Chateaux, Relais Gourmand Hotel Gidleigh Park.
He spent 4 years there where he graduated to the role of Sous Chef, and regards Michael Caines as the major influence of his career.
Dale left Kauri Cliffs where he held the position of joint Head Chef to open Cape Kidnappers in the Hawke’s Bay the region considered the Fruit Basin of New Zealand.
Whilst in New Zealand he has been back home and to the USA on trips to expose himself to new culinary techniques and experience other Relais and Château properties.

Inspiration for recipes comes from our daily changing menus and the best local produce which is supplied to us daily from a wide range of suppliers.

Modern European using the finest New Zealand Produce
Which other Relais & Chateaux Chef would you like to meet?
Throughout my work and travels I have met a lot of Relais & Châteaux Grands Chefs but never the Roux Brothers who inspired a generation of chefs.
