Soy Marinated Tuna

Recipe to serve 6 people
I have been doing this dish for a while now proving hugely popular at dinner parties
and so easy to do and no problem for making in advance it can be made as a salad on a platter,
or as I have in the picture plated it individually.
Ingredients & Method
½ Cup Soy Sauce
½ Cup Rice Wine Vinegar
¼ Cup Mirin
¼ Cup Sake
1 table spoon Minced Garlic
3 table spoon Grain Mustard
300ml Olive Oil
Mix all the ingredients together except for the oil, Using the stick blender slowly add the oil so an emulsification occurs.
Marinade Tuna for 3-4 hours then use the marinade as dressing for around the plate. (can use this marinade for any meat or fish, works well for items on the bbq)
300g Yellow Fin Tuna
50g Carrot (Julienne)
50g Daikon (Julienne)
10g Chive (Chopped)
50g Cucumber Ribbons
In a hot pan sear the tuna evenly on each side.
Place in marinade.
When ready to serve dress the carrot, daikon and
cucumber with the marinade.
Crisp Aromatics
15g Sliced Garlic
15g Sliced Shallot
10g Julienne Chilli
Deep Fry the aromatics untilgolden brown
Teriyaki Sauce
100mls Soy Sauce
90mls Mirin
45mls Sake
45mls Apple Juice
75g Sugar
Combine all ingredients together and whisk to the boil. Simmer until it has reduced and thickened naturally. It will have a sheen and gloss.
To Garnish
Slice the tuna on the centre of the plate, place the dressed vegetables on top of this.
Use the marinade to dress around the outside and a little mayo over the top.
Finish with some teriyaki sauce (great for on top of chicken and tempura will last for a long time if refrigerated) and by sprinkling on the aromatics and the chive.
