Vanilla panna cotta

Vanilla panna cotta with pomegranate syrup and lavender honey

serves six

- 2 1/4 cups cream
- 3/4 cup skim milk
- 3/4 cup sugar
- 1 whole vanilla bean
- 1 teaspoon vanilla essence
- 2 1/2 sheets gelatin
- ½ cup lavender honey
- 6 tablespoons pomegranate syrup

Scald cream, skim milk, sugar, vanilla and scraped vanilla beans in a non-reactive sauce pan...

Soak gelatin in cold water. After cream mixture is scalded add softened gelatin leaves and whisk well. Put liquid in greased molds and refrigerate at least 3 hours.

Un-mold each panna cotta in the center of a chilled plate. Drizzle the honey over each of the panna cottas.

Drizzle a tablespoon of the pomegranate syrup around each one and serve.
