George Francisco, Executive Chef of Jonah’s, Whale Beach leads the kitchen with his great passion for fine and exotic food combined with his unparalleled knowledge of produce, method and style.
George has gained his extensive knowledge and far reaching reputation working and training in a number of internationally acclaimed restaurants on both the East and West coast of the United States including ‘Stars’ and ‘Farrallon’ both in San Francisco.
His Modern Australia style of cooking has a significant French influence, having spent extensive periods living, working and travelling throughout Western Europe and in particular France. The French influence in Georges’ cooking is demonstrated by his love of ingredients such as foie gras and truffles. George demands the highest quality of fresh produce and it is obvious on sight and taste.

Usually from seasonally available products. When I discover a new product or something comes into season it always inspires new dishes
