Former capital of Ireland, Kilkenny was founded in the 6th century around St. Canice monastery. The imposing castle on the banks of the River Nore is an absolute must. The town centre has retained its mediaeval appearance with numerous colourful houses interspersed with “pubs” where you can taste the famous red Kilkenny beer brewed locally!
