Five generations of hoteliers, with a sixth on the way, have managed this property. The interior design is mountain-inspired without being rustic, and luxurious but not over-done. The owners Michel Philippe, his daughter Sylvie and son-in-law Ghislain expertly planned this décor and created a beautiful, luxurious chalet. With the comfy chairs and coordinating light wood, they have succeeded in creating an exceptional ambiance located just at the bottom of the ski trails. It is a pleasure to take off your skis and enjoy this alpine retreat.

This abbey has been home to the King’s Lieutenants, barracks for military governors, and finally was the abode of a Baron of the Empire. Tucked away at the foot of the Alsatian vineyards, this now hotel has travelled through time, collecting secrets along the way. The light bedrooms are very comfortable and owners Christiane and Pascal Funaro are warm and welcoming. Food lovers can choose between two places to dine: Le Prieuré, with its sophisticated creations, and the Apfelstuebel, a traditional Alsace-style Winstub, serving up typical country fare. The Sélestat humanist library – which has been inscribed in the Unesco’s Memory of the World Register in 2011 – hosts conferences on medieval books.

His unforgettable foie gras is highly appreciated, as well as his fresh sea fish, truffled blue lobster and the full repertoire of local game, combining the best of tradition and modernity. His renowned gourmet breakfast with foie gras and truffle brouillade and seasonal dishes delight the eyes and above all the taste buds. They can be savoured during mild weather in a magnificent shady garden, or by a fireplace during the winter in this history-steeped setting where the Soldiers of Year II, celebrated by a famous poem of Victor Hugo and the works of Erckmann & Chatrian, the neighbours from Phalsbourg, met. On the doorstep of the vineyards of Alsace and the mysterious Vosges, the chef has turned this inn with its imperial rooms into a unique gourmet experience in this historical city.

Even if he can’t take the credit for Yves Klein blue, this particular Mr. Klein could also copyright some of his creations. His name is Jean-Georges Klein and he is the Grand Chef of this family-run establishment where purity reigns both in the décor and on the plate. However, this minimalism is spiced up by a big dash of daring: “Every day I test combinations, contrasts, tales of the unexpected, I try things out, I like to take risks.” Food is served in a light-filled dining room with a glass roof, in the heart of the forest. The motto here is that “everything is possible, as long as you aren’t set in your ways”.
