Txuku Iriarte, a founding director of The Malabar House, hails from the Basque city of San Sebastian, undoubtedly one of the food capitals of Europe.
While developing the Malabar House cuisine she took inspiration from her rich culinary inheritance and blended it with the superb skills of the Keralan cooking.
Cochin, the spice capital of the world, is home of the finest sources for spices and has an abundance of fresh seafood along its coast line.
These are the ingredients to create our own food identity, a continuous process to develop a subtle world of flavours meandering between the wealth of Indian spices & recipes and the texture & freshness of the Mediterranean cuisine. Under her mentorship a team of young chefs share her passion and develop their own confidence to cross cultural barriers. Biju Varghese, the young and con-genial present chef is the counterpart in this culinary dialogue. Jointly, they develop recipes and an own culinary style.
