I am from a small village on the banks of the Rhine, about 40km from Schaffhausen. As a baby, I was lulled by the river flow. At the age of ten, I already knew that I wanted to become a chef. So off I went to Lausanne on the shores of Lake Geneva to train at the Beaurivage Palace and the Catering College. This was prior to my departure for Hong Kong where I had the opportunity to work at the prestigious Peninsula from 1970 to 1975. In the mid-1970s, my parents suggested that I return home to take up the reins of the family-owned establishment. I discovered that the fog, snow, mountains and forests were still there. The same went for trout with blue cheese, lamb’s lettuce salad and Swiss bread. This atmosphere and these flavours are found nowhere else...

In 1957, my father bought this building which was formerly the headquarters of the fishermen’s guild. It is an impressive house whose foundations are lapped by the river flow. Upon returning from Hong Kong, we converted this bourgeois inn into a more sophisticated establishment. The sleek lines today match a modern kitchen which has a surprising Asian twist. Hallen für neue Kunst and the IWC Museum, Schaffhausen

The Hallen für neue Kunst is one of those private museums that is both outstanding and little known. Opened in 1984, it was launched as a kind of "cultural manifesto" on progressive art. The building has been specially designed to accommodate works by major contemporary artists such as Ryman, Mangold and Joseph Beuys. Nearby the Hallen für neue Kunst, the very beautiful IWC Museum sits next to the famous watch factory. I’ve worn an IWC for many years, day and night. For me, it’s really about philosophy...

Zahner family wines, Truttikon

The municipality of Truttikon is very close to Schaffhausen. This is where the Zahner family skillfully and patiently produce their wines. Their superb Riesling-Sylvaner, Pinot Noir and Pinot Blanc, Gewürztraminer and a very nice sweet wine we call "over matured" all feature on the list in my restaurant. For some years, the wine-makers in the canton of Schaffhausen have also produced some very nice Pinot Noirs that will surprise the most discerning wine amateurs...

From Schaffhausen to the medieval city of Stein am Rhein, you’ll discover one of Europe’s prettiest river cruises. The Rhine’s source rises in the Swiss Alps, in the canton of Grisons. Pleasure cruisers make a port of call in front of our house. As a boy, I would watch the steamboats go past ... Further south, a cruise leads passengers to the Rhine waterfalls, the largest on the continent with an average flow of 700 000 litres per second. A 23m drop that makes for a truly spectacular sight.

I’ve known Hubertus Real, the master of the house, for a long time and I visit him regularly at his home. The hotel is one of those establishments where attentive service gives you a nice homely feeling. In 2011, the famous Swiss landscape painter Enzo Enea designed an eagle’s nest for his restaurant. This is a display for young and old. Eagles, falcons and owls fly and land in a second just inches from your shoulder, which is wonderful and frightening all at once. The falconer’s commentary aids better understanding of the world, beauty and sharpness of birds of prey.

Stiftsbibliotek, Saint-Gall

This abbey library founded in the 9th century is one of the most beautiful medieval libraries in the world. The impressive room was built during the second half of the 18th century, and is a UNESCO World Heritage site, listed as a "perfect example of a Carolingian monastery". I can still remember being awestruck by its beauty the first time I entered. Annual themed exhibits display the manuscripts and other documents relating how the monks live.

Bad Ragaz golf course

I’ve played this outstanding course a number of times (18 holes, par 70) located at an altitude of 520m. I took up golf a few years back when I stopped horse-riding. The Bad Ragaz golf course is one of those old clubs with well-tended fairways and greens, with a backdrop of natural obstacles and mountains in a majestic setting.

Wines by Martin Donatsch, Malans

Around Malans, a small village in Grisons, is the refuge of Martin Donatsch, two-time world champion producer of pinot noir. Following in the footsteps of his father Thomas - who was a pioneer of wine-growing in Switzerland - Martin frees himself from the trends in order to follow his inspiration and his own path. Feel free to take the cellar tour followed by a wine-tasting. Heidi - Martin’s mum - owns a small tavern (Ochsen) on the property where she serves really simple roasting sausages and Bünderfleisch along with a glass of wine. Sheer delight.

Hotel Walther
Established in 1907, this former palace has been in the Walther family for three generations. Today, Thomas and Anne-Rose still take great care of their guests’ well-being. The seven floors of this magnificent Art Nouveau-inspired building are imbued with cherry wood, larch and Swiss pine. The hotel opens onto the delightful landscape of the Engadin. In the visitors’ book, you can read these words by Lenin: The world will be, but it will be differently.

Segantini Museum, Saint-Moritz

Giovanni Segantini (1858-1899) who died in his log cabin on Schafberg, just above Pontresina, is still one of my favourite painters. Before he turned to Symbolism, Segantini depicted the Alps like few artists before him. His famous Triptych of the Alps, Harmony of Life - Nature - Harmony of Death, is strikingly shown off under the museum’s dome and is alone enough to justify a visit.

Voyage on the Glacier Express

Whether in summer or winter, this train provides an unforgettable journey between Zermatt and St Moritz. The seven-hour trip is a succession of mountain landscapes, spectacular valleys and breathtakingly deep gorges. A rail cruise through 91 tunnels and over 291 bridges. I only caught this train once, in the height of the summer. The sky was cloudless and I felt as if I was in a movie. Another option is the Bernina Express that crosses a part of the Alps from Pontresina to Tirano. The return journey is made in one day...

Piero Peduzzi butcher’s shop in Savognin

Savognin is a small village located at an altitude of 1 200m and in particular has an amazing butcher’s shop. People come from far and wide to try the typical Swiss cooked meats by Piero Peduzzi. The artisan butcher is the owner of a small abattoir. You’ll feel like you have been transported to the old Les Halles market in Paris. His roasting veal sausage will send your taste buds to heaven...

Tarasp Castle

This is a fortified sentinel set on a hilltop. The castle stands over the houses in the village of Tarasp like a mother broods over her children. Built in the 11th century in the Austrian style, it was fully restored in the early 20th century. Besieged many times down through the centuries, it was never taken. These days you can visit the knights’ halls and staterooms, chapel and the wonderful 2 500 pipe organ. Matinée concerts are sometimes organised.

Cross-country skiers can enjoy 150 km of classic tracks, and those set up for skating. On site there are also runs totally dedicated to toboggans and one of the hugest natural ice rinks on the continent. You come across skaters as well as small groups of people armed with brooms. These are the curlers - an Olympic sport...
