My Route du Bonheur, from Macau to Taiwan, the garden islands

I was born in Taipei, the capital of Taiwan. I moved to Taichung with my family after secondary school. This city has a very special atmosphere. People here walk more slowly, taking the time to enjoy life. When I returned to the island after training as a chef in France, Taichung was naturally where I wanted to settle. It is just an hour from the capital, and so close to the sea and the mountains.

This former fortress, built by the Portuguese in the 17th century, has been transformed into a superb Relais & Châteaux hotel. In front of you, Macau’s Inner Harbour and the Pearl River Delta reflect both the history and beauty of the site. People even come to get married in the hotel, in the superb Chapel of St. James, built in 1740.

When I visited Macau for the first time, I just had to stop at this bakery. Its tarts had become well known far beyond the shores of the island, so I couldn’t resist the temptation to come and try one in the place they came from. The tart, made of custard inside flaky pastry, was delicious.

A stroll in the historic centre, Macau

I love Macau for its atmosphere and the nostalgia it evokes. I like to walk through the quiet streets with their distinctive architecture. Take a stroll in the morning, before the tourists arrive, to the amazing facade of the Church of Mater Dei and the Ruins of St. Paul’s, before heading towards the Baroque-style St. Dominic’s Church, with its lovely decorated wood ceiling. Continue to Senado Square, the heart of city life. This is a Macau far from the casinos…

The parks of Macau

Because of its many parks, Macau is considered one of the gardens of Asia. It’s easy to escape from the stresses of urban life, even in the very centre of the city. You are spoilt for choice between the romantic Camoes Garden with its artificial grotto, and the superb Flora Gardens, located at the foot of Guia Hill. Without a doubt, one of the most beautiful places is still the Lou Lim Ieoc Garden, which was designed in the late 19th century and which today boasts splendid miniature landscapes including bamboo forests and small lakes.

Sunrise over Sun Moon Lake

Chiang Kai-shek liked to come here to relax. Whenever friends from abroad come to visit, I bring them to the banks of this lake. Rather than taking a boat with all the tourists, we take a leisurely walk along the paths, enjoying the magnificent countryside. The next time that I come here, I’m going to spend the night and enjoy the sunrise over the waters of the lake.

A walk in Sanyi

Sanyi is in the mountainous region of Miaoli, known for its wood sculptures. I often come here at the weekend with my family, to walk in the forest and through the superb tea plantations. For lunch, there are several little restaurants offering traditional Hakka cuisine. The walk passes the small Fu Kuei Mu Dan museum. I particularly like the architecture of this museum, which houses superb paintings and sculptures by Taiwanese artists.

HSiang Xi Lee Sheh Tea House, Taipei

This is without a doubt the best tea room in Taiwan! Once or twice a month I come to this absolutely enchanting place, located close to the Memorial Hall. I really like the owner, a former architect turned tea expert. He will make and serve you a cup of tea with milk that is almost magical.

Shiling Night Market, Taipei

While I was at university, I would often come and have dinner in this night market after class. This is a one-of-a-kind place in Taipei and I’ve always really enjoyed its cheerful atmosphere. Everywhere you look there are stalls serving delicious and inexpensive dishes, including pasta, fried dumplings and tempura. This is the meeting place for the whole city from 5pm to midnight.

The National Palace Museum, Taipei

Bringing together the collections of the Imperial Palace of the Forbidden City, this is the island’s finest museum. It contains the largest collection of Chinese handicrafts in the world: bronzes, ceramics and ancient manuscripts recount the extraordinary history of China. I particularly like the calligraphy and painting collections from the Song Dynasty.

The nostalgia of Jiufen

A visit to this delightful little town allows you to gain a better understanding of the history of the whole island. Founded during the gold rush, the town still has a distinctive atmosphere. When you wake up in the early morning, in the mist, the town is enveloped in a very touching sort of nostalgia. In 1989, the famous Taiwanese director Hou Hsiao-Hsien filmed A City of Sadness here. The film was highly successful.

The fishermen of Keelung

From two o’clock in the morning, everyone hurries to the Keelung fish auctions. The fishermen return to shore during the night and spread out their catch close to the temple. They benefit from the rocky coastline and bring back fish which are both rare and tasty. I often feature them in my daily specials.
