My Route du Bonheur, from Hong Kong to Taiwan, the garden islands

I was born in Taipei, the capital of Taiwan. I moved to Taichung with my family after secondary school. This city has a very special atmosphere. People here walk more slowly, taking the time to enjoy life. When I returned to the island after training as a chef in France, Taichung was naturally where I wanted to settle. It is just an hour from the capital, and so close to the sea and the mountains.

Bibo, a French restaurant and lounge bar, is unlike anywhere else on earth. Its building dates back to the 1930s and once housed the Compagnie Générale Française de Tramways – abandoned it then became a place where street artists could find their expression and took the name Bibo. Today, Bibo is an offbeat place which combines the best of two different worlds: contemporary art and cuisine. In an underground setting displaying works by the finest contemporary artists from Keith Haring to Murakami, Executive Chef Mutaro Balde and Chef de Cuisine Conor Beach masterfully serve delicious French gourmet cuisine where everything, from the bread to the ice cream, is home-made.

Happy Valley Races, Hong Kong

In the evening, the Happy Valley racetrack becomes the heart of Hong Kong for a few hours. Before a lush green landscape spreading out over 5.4 hectares, the lights from the apartments create a singular backdrop above the jockeys racing full speed ahead. Horse racing is Hong Kong’s most popular sport. On Wednesday evenings, approximately 20 000 spectators place their bets alongside the tracks. From the beginning of September to mid-June, two racing tracks welcome the popular horse racing events twice weekly (some are featured in the World Series).

Take a stroll through countless markets, Hong Kong

It’s the strident whistling and occasional singing which welcome buyers to Yuen Po Street Bird Garden, the Bird Market. Along the walkways, curious and excited passerby negotiate the value of brightly colored passerines. Prices vary according to feather hues and the beauty of each bird’s melody. Bird markets, flower markets, fish markets and night markets- you can find everything in Hong Kong. From the popular stalls of the Kowloon Peninsula to prestigious designer label malls around the Central area of the Hong Kong island, you can explore two different worlds to satisfy your urge to shop.

Sunrise over Sun Moon Lake

Chiang Kai-shek liked to come here to relax. Whenever friends from abroad come to visit, I bring them to the banks of this lake. Rather than taking a boat with all the tourists, we take a leisurely walk along the paths, enjoying the magnificent countryside. The next time that I come here, I’m going to spend the night and enjoy the sunrise over the waters of the lake.

A walk in Sanyi

Sanyi is in the mountainous region of Miaoli, known for its wood sculptures. I often come here at the weekend with my family, to walk in the forest and through the superb tea plantations. For lunch, there are several little restaurants offering traditional Hakka cuisine. The walk passes the small Fu Kuei Mu Dan museum. I particularly like the architecture of this museum, which houses superb paintings and sculptures by Taiwanese artists.

Your heart rate suddenly slows as you enter this hotel which was, more than a century ago, the first hot spring hotel opened in Taiwan. I love the architecture of the buildings and the elegantly decorated rooms. And most of all, perhaps, the discreet and attentive service…

HSiang Xi Lee Sheh Tea House, Taipei

This is without a doubt the best tea room in Taiwan! Once or twice a month I come to this absolutely enchanting place, located close to the Memorial Hall. I really like the owner, a former architect turned tea expert. He will make and serve you a cup of tea with milk that is almost magical.

Shiling Night Market, Taipei

While I was at university, I would often come and have dinner in this night market after class. This is a one-of-a-kind place in Taipei and I’ve always really enjoyed its cheerful atmosphere. Everywhere you look there are stalls serving delicious and inexpensive dishes, including pasta, fried dumplings and tempura. This is the meeting place for the whole city from 5pm to midnight.

The National Palace Museum, Taipei

Bringing together the collections of the Imperial Palace of the Forbidden City, this is the island’s finest museum. It contains the largest collection of Chinese handicrafts in the world: bronzes, ceramics and ancient manuscripts recount the extraordinary history of China. I particularly like the calligraphy and painting collections from the Song Dynasty.

The nostalgia of Jiufen

A visit to this delightful little town allows you to gain a better understanding of the history of the whole island. Founded during the gold rush, the town still has a distinctive atmosphere. When you wake up in the early morning, in the mist, the town is enveloped in a very touching sort of nostalgia. In 1989, the famous Taiwanese director Hou Hsiao-Hsien filmed A City of Sadness here. The film was highly successful.

The fishermen of Keelung

From two o’clock in the morning, everyone hurries to the Keelung fish auctions. The fishermen return to shore during the night and spread out their catch close to the temple. They benefit from the rocky coastline and bring back fish which are both rare and tasty. I often feature them in my daily specials.
