My great grandfather purchased this establishment, the first hotel outside of France to become a member of Relais & Châteaux. Today, my wife Yolande and I are the fourth generation of restaurateur’s at Auberge du Moulin Hideux. I went into cooking with the idea of one day taking over the family Auberge firmly in mind. In 1999, I began a culinary trip that led me to Jacques Thorel, Michel Bras and Michel Troisgros, the Netherlands and Italy. I finally came “home” in 2005 to take advantage of what life has to offer here; Belgium has so many unexpected pleasures.

Owners Isabelle and Johan Creytens have transformed what has been a store, the house of a notable, a bank, and finally a superb hotel. Located in the heart of the city, the original structure dates back to the end of the 14th century. The upstairs rooms are tastefully decorated and some of them afford a splendid view of the city’s rooftops, the theatre and the belfry.

La Samaritaine, Bruxelles
A small café-theatre in the antique-sellers quarter, where Huguette Van Dyck has been providing opportunities for up and coming talent since 1985. Try the toasted menu items or snacks before or after the performances. This beautiful vaulted cellar dating back to the 17th century has had its “service to the public” recognized.

Henri-Chapelle American Cemetery and Memorial
As a history buff, I have always been very interested in the battles that took place in this region during the 20th century. In Henri-Chapelle you’ll find a powerful cemetery where almost 8 000 American soldiers are laid to rest (of 17 600 deaths that occurred here).
Aubel Sunday Market
One of the nicest Sunday markets in Belgium. There was a grain market here as early as the 17th century. Today, people come to buy artisanal cheeses (taste the Herve), free-range eggs, local charcuterie and sirop de Liège, made from pears, apples and dates (our own sort of Proust’s madeleine).

The bread at Moulin de Hollange
Over twenty years ago, an old surgeon purchased this beautiful mill that has been in operation and producing stone-oven bread for almost six centuries. The mill still grinds its own flour, producing tasty results. They also provide us with all of our Belgian bread.
Lunch in Bastogne
Enjoy lunch in a coach reminiscent of the Orient-Express. Léopold Bertholet’s family has been providing this pleasant stationary voyage since 1946 when they purchased a tram wagon. Our family often comes here for a simple bouillabaisse or the excellent eels.

River and forest; magnificent platforms offering exceptional views. We’re surrounded by oak and beech in the ancient Duchy of Bouillon. Follow the road and wind up to discover the Belvédère, the Giant’s Tomb or the panorama from Rochehaut. From Bouillon the road keeps on going until Luxembourg.
