Owner and Maître de Maison of Auberge du Moulin Hideux
A getaway to Benelux

My great grandfather purchased this establishment, the first hotel outside of France to become a member of Relais & Châteaux. Today, my wife Yolande and I are the fourth generation of restaurateur’s at Auberge du Moulin Hideux. I went into cooking with the idea of one day taking over the family Auberge firmly in mind. In 1999, I began a culinary trip that led me to Jacques Thorel, Michel Bras and Michel Troisgros, the Netherlands and Italy. I finally came “home” in 2005 to take advantage of what life has to offer here; Belgium has so many unexpected pleasures.

Relais & Châteaux proposes its Routes du Bonheur for your inspiration: they are suggestions of itineraries that you can adapt to your preferences and desired experiences. Our advisors are at your disposal to individualise your routes and help you make reservations at our properties.
Example for a four-night stay from €843*
* Minimum indicative rate per person, subject to availability, on the basis of a double room with double occupancy, including accommodation, breakfast and dinner (menu, without beverages) in the properties suggested for the itinerary.
Activities on site and nearby must be reserved by you.

Hôtel Héritage

In the heart of historic Bruges
Hôtel Héritage
Owners Isabelle and Johan Creytens have transformed what has been a store, the house of a notable, a bank, and finally a superb hotel. Located in the heart of the city, the original structure dates back to the end of the 14th century. The upstairs rooms are tastefully decorated and some of them afford a splendid view of the city’s rooftops, the theatre and the belfry. www.hotel-heritage.com

Oostkerke

In the shadow of Bruges and forgotten in tourist brochures, Oostkerke is nevertheless one of the most beautiful villages in West Flanders. The great Jacques Brel spent holidays here.

On the route...

Relais & Chateaux Chalet de la Forêt, Bruxelles

Pascal Devalkeneer is a dynamic and very talented young chef. His cuisine includes delicious and delicate dishes. Rediscover chanterelles, artichokes, or courgette blossoms; let your taste buds take you to the edge of the beautiful Soignes forest, only a short distance from the city.

Relais & Chateaux Chalet de la Forêt

Le Moeder Lambic, Bruxelles

You’ll find one of the best beer bars in the world on Rue de Savoie, with more than 800 items on the menu. A locale that will please lovers of both hops and comics (a large selection is available to read).

La Samaritaine, Bruxelles

A small café-theatre in the antique-sellers quarter, where Huguette Van Dyck has been providing opportunities for up and coming talent since 1985. Try the toasted menu items or snacks before or after the performances. This beautiful vaulted cellar dating back to the 17th century has had its “service to the public” recognized.

Cheeses of Van Tricht, Anvers

In 2010, The Wall Street Journal named Michel van Tricht & Son the best master cheesmaker-ripener in Europe; worthy recognition for suppliers to the Royal Family and, for forty years, us of course.

La Butte aux Bois

A romantic retreat in a fairytale setting close to ancient Maastricht
La Butte aux Bois
In the middle of a magnificent park, this large manor serves as a romantic and relaxing invitation. Located on the edge of the Hoge Kempen Nature Reserve, explore the wonderful landscapes by bike or on horseback before unwinding at Aquamarijn, voted “Belgium’s Best Spa” in 2010. www.labutte auxbois.be

Château St-Gerlach, Valkenburg aan de Geul

Maastricht's country estate
Château St-Gerlach, Valkenburg aan de Geul
A monastery was built on the burial site of the soldier-turned-hermit Gerlach (Gerlachus van Houtem) to which pilgrims came to gather at the Saint’s tomb. In the centuries that followed, the estate was home to an exclusive convent for noblewomen. Finally in 1997, the property was converted into a luxury hotel. The spacious rooms built on the former smallholding now look onto the Baroque gardens. Today, an arboretum of fruit trees, a rose garden, swimming pool, spa, bistro and restaurant form one of the most prestigious settings in the country.

Relais & Chateaux Da Vinci, Maasbracht

A recent addition to Relais & Châteaux, this establishment has established itself as one of the best restaurants in the Netherlands. With Margo Reuten in charge of cuisine, and Petro Kools, the wine, it harmoniously mixes modernity and inventiveness. The owners have created a locale that naturally blends design and taste.

On the route...

Henri-Chapelle American Cemetery and Memorial

As a history buff, I have always been very interested in the battles that took place in this region during the 20th century. In Henri-Chapelle you’ll find a powerful cemetery where almost 8 000 American soldiers are laid to rest (of 17 600 deaths that occurred here).

Aubel Sunday Market

One of the nicest Sunday markets in Belgium. There was a grain market here as early as the 17th century. Today, people come to buy artisanal cheeses (taste the Herve), free-range eggs, local charcuterie and sirop de Liège, made from pears, apples and dates (our own sort of Proust’s madeleine).

Auberge du Moulin Hideux

Take the time to listen to the silence
Auberge du Moulin Hideux
Recognized with a Michelin star over fifty years ago and the first member of Relais & Châteaux outside of France, Auberge du Moulin Hideux is one of a kind. Dating back to the 17th century, the mill has ten rooms and two intimate, spacious suites. A stopover that matches the seasons; forest and hearth fire, stream and heated pool. www.moulinhideux.be

The bread at Moulin de Hollange

Over twenty years ago, an old surgeon purchased this beautiful mill that has been in operation and producing stone-oven bread for almost six centuries. The mill still grinds its own flour, producing tasty results. They also provide us with all of our Belgian bread.

Lunch in Bastogne

Enjoy lunch in a coach reminiscent of the Orient-Express. Léopold Bertholet’s family has been providing this pleasant stationary voyage since 1946 when they purchased a tram wagon. Our family often comes here for a simple bouillabaisse or the excellent eels.

On the route...

A panoramic route

River and forest; magnificent platforms offering exceptional views. We’re surrounded by oak and beech in the ancient Duchy of Bouillon. Follow the road and wind up to discover the Belvédère, the Giant’s Tomb or the panorama from Rochehaut. From Bouillon the road keeps on going until Luxembourg.

Relais & Chateaux Mosconi Restaurant

A little slice of Italy in the historic quarter of Grund, in Luxembourg City. Ilario and Simonetta Mosconi serve up the best flavours the country of Boticelli and Paolo Rossi has to offer. I don’t know a better Italian restaurant outside of Italy!
